Nutrient-Dense Recipe
Bone Broth Beef & Root Veggie Stew (Serves 4–6)
Ingredients
1 lb Hickory Heal Farm Stew Meat
2 Tbsp beef tallow or butter
1 onion, chopped
3 cloves garlic, minced
2 large carrots, sliced
2 parsnips, cubed (or sweet potato)
2 celery stalks, chopped
1 cup chopped kale or spinach
4 cups homemade bone broth (or high-quality stock)
1 bay leaf
1 tsp sea salt
½ tsp black pepper
½ tsp thyme
Optional: ½ cup red wine or apple cider vinegar splash for depth
Instructions
Heat tallow in a large pot. Brown stew meat on all sides, then remove.
Sauté onion, garlic, celery, carrots, and parsnips until fragrant.
Return beef to pot. Add bone broth, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5–2 hours until meat is tender.
Stir in kale or spinach during the last 10 minutes of cooking.
Adjust seasoning and serve warm with sourdough bread or over rice.
