Nutrient-Dense Recipe: Braised Short Ribs with Root Vegetables

Brown 2 lbs short ribs in tallow.
Remove, then sauté onion, garlic, carrots, and celery.
Deglaze with ½ cup red wine or apple cider vinegar.
Add 4 cups bone broth, thyme, and bay leaf.
Return ribs, cover, and braise at 300°F for 3 hours until tender.
Serve with mashed sweet potatoes or over rice.
